Remember Mamaw's recipe box, so worn with age that the top and part of the bottom were missing? A sturdy rubber band was that box's best friend! Years ago, I was given the box with the understanding that I would create a cookbook to share with all of the family. I tried, but it never really became the product that I wanted it to be. I decided the next best thing would be to share the recipes in a way that anyone who was interested could find them and use them. Hence, this blog.

Creamed Eggs
I intentionally scanned the back of this card because of the way Mamaw spelled her name on it. Was she experimenting with the spelling like so many people do?

There is nothing better than Creamed Eggs on Toast! Unless you ask my kids, of course. They don't know what's good. I don't really recall Mamaw using a press on the yolks, though. Can someone chime in on this?
ReplyDeleteI remember eating her Creamed Eggs on Toast as far back as about 1942 or 1943 when we lived in Wichita Falls. She never used a press on the yolks; the yolks were sliced with the whites and mixed into the white sauce. I'd guess that this recipe card predated that time, but she never changed it after she changed the way she prepared it. But it's good; we made it last month!
ReplyDeleteActually,we had it this morning for breakfast, and I noticed that she used butter rather than margarine - I suspect this card must be from the 1930s since margarine wasn't that popular until the pressures of WW-II made it so. That's an opinion, not necessarily a fact.
